A connector visitor and other such stuff

polyphonicvegan visited and I have ascertained she is a connector. She also tried convincing me I could bike 40 miles for lemonade. I remain unconvinced (however, vegan donuts DO convince me greatly). But I do want to visit and I *may* attempt a bike ride that won't completely embarrass me.

More importantly, she oohed and ahhed over Mina and Celeste. This makes her an excellent person who deserves the best in life. (And I actually do mean that).

I made vegan muffins because I felt like it.

Since I'm a fan of taking base ingredients and just going CRAZY! here's my best guess at the recipe:

Lemon Flaxseed Muffins OF DOOM
1.5 cups of flour (I did 1/2 cup spelt flour for thickness and 3/4 regular flour)
2 tsp. lemon extract
Flaxseed as egg replacer (2 tbs. flaxseed boiled for ten minutes in 1/4 cup of water)
1/4 cup of maple syrup (I should have added more, so maybe 1/3-1/2 cup)
1 cup of soy milk (or so. i also want to try it with orange juice for extra flavor, yum)
2 tsp. baking powder
1 tbs. safflower or vegetable oil (not olive)

Oil well cupcake tin. Bake at 350 F for 20-25 minutes or until knife/toothpick comes out clean.

I think I needed to add a bit more soy milk, so I'm going to play around with liquid level.

In other news, Mina is a total limp faker. She limped for effect* at home, then ceased limping when playing with Shiner, the 90lb American Bulldog.

I'm sure I'm not a connector, but it would be hard to determine based on that test because I have a serious inability to remember people's names. I can recite nearly verbatim conversations we've had, and can probably tell you the name of their pet, but for some reasons, names are very tough for me.

I can't handle soy products. I bought soy flour once for a recipe and... *ugh*

Dogs totally fake it. When Shadow hurt her leg she tried to draw it out. After a week she'd be walking along fine, then look at you to see if you were watching. If you were, she went into limp mode.

I think of a connector as someone who "knows everyone". They're like a jack of all trades and have friends from different sectors of society. (Apparenly, polyphonicvegan's dinner parties can be...awkward because of the wide array of different groups represented.).

I don't use soy flour - I use spelt and wheat or white flour. Sometimes, for liquid, I don't even use soy milk but will use a mixture of water and a fruit juice. Fruit juice adds lots of fun flavor! Bummer about not being able to handle soy products. Excluding soy milk and the sometimes tofu, I'm not a huge processed soy fan. :)

Those faker dogs. What the heck is up with them? :)

First connection
1) Thanks again for the abundance of pooch snuggles you so generously shared with me! I imagine it was not easy seeing your beloved Mina and Celeste in the arms and lap of another human! They are my new favorite pups east of Novato. :)€

2) MMMM, muffins. I had a strong craving for another muffin on the way home. Thanks for posting the recipe of sorts!

3) I'll take you on the donut and soy latte ride before suggesting you try the lemonade ride. Best to take things slowly one vegan donut at a time.

Duh! PS! My other comment was titled "First connection" because I just emailed Shelby for you. I gushed about your mad vegan and photo creds and gave him your email address. If he takes forever to contact you, it's because he's the midst of his touring season and he gets 500 "OMG u r soooooooo cute! *huggles*" emails a day from slutty teens on myspace.

Sweet - Mina and Celeste are pretty stoked with the new title. I'm really all for sharing the love of Mina and Celeste. :)

Yay for muffin love! I don't grind the flaxseeds but boil them whole. I've never tried using ground flaxseed as an egg alternative...

Damn those slutty teens. :) Anyway, thank you! I hope he does email because, unlike some awesome people, I have a hard time just finding an "in" in certain situations.
